Chocolate & caramelised macadamia nuts cookies :

Ingredients :

-150g of almond or hazelnut butter 

-1tbsp of melted coconut oil 

-60g of date paste (or you can blend pitted Medjool dates to make your own paste)

-40g of coconut sugar

-2 eggs 

-30g of raw cacao powder 

-30g of almond flour 

-1tsp baking soda + a pinch of salt 

-100g dark chocolate chunks (I used 70%)

-50g chopped macadamia nuts 

Directions : 

-Preheat oven to 180°C

-Start by making a date caramel by simply putting together 10g of date paste and a tbsp of water in a saucepan. 

-Stir well until you have a thick syrup 

-Pour the macadamia nuts in it and let it caramelized for a few minutes

-In a bowl mix the nut butter, coconut oil, date paste, sugar and eggs together.

-In a separate bowl mix the almond flour, baking soda, salt and raw cacao powder together before adding it to the first bowl.

-Mix until the batter is smooth and comes together. 

-Pour the two remaining ingredients into the batter and stir until evenly spread.

-Line a cookie sheet with parchment paper. Make balls of dough (2 Tbsp) and space them 2-inches apart on the cookie sheets. 

-Bake for 8 minutes. Let cool on the cookie sheets at least 10 minutes before removing.
