Hasselback potatoes 


Prep time : 20min 


Cooking time : 60 min 


Serves : 1 potato per person  

Ingredients :

-1 potato per person 

-1/2 garlic clove per person / potato 

-1/4 yellow onion per person / potato

-Dried or fresh thyme

-Bay leaves 

-Grated nutmeg

-Salt & pepper 

-Extra virgin olive oil (I used 2 tbsp for 4 potatoes)

Directions : 

-Wash the potatoes with water and scrub them if very dirty.

-Dry the potatoes. 

-Cut slits in the potatoes, stop just before you cut through to leave the bottom intact.

-Put it in a baking dish covered with parchment paper. 

-Drizzle half the olive oil all over the potatoes. 

-Sprinkle with salt and pepper.

-Crush garlic

-Insert garlic, thyme and bay leaves between the slits of the potatoes. 

-Bake for 30 minutes. 

-While baking, cut the onion. 

-Pour the remaining oil on potatoes and add the onion pieces to the baking dish. 

-Put back in the oven for another 20 minutes. (Adjust cooking time if you use bigger potatoes) 

-Serve immediately.
